- Scarmoza Cheese : is an Italian cow's milk cheese, a plastic (or stretched) curd cheese, in which the fresh curd matures in its own
whey for several hours to allow acidity to develop by the process of lactose being converted to lactic acid. Artisanal cheesemakers generally form the cheese into a round shape, and then tie
a string around the mass one third of the distance from the top, and
hang to dry. The resulting shape is pear-like. This is sometimes
referred to as "strangling" the cheese. The cheese is usually white in
color unless smoked. When smoked, the color is almond with a lighter interior.
- Feta Cheese : usually it is made from the milk of sheep or goats, originally from the Greek mainland, or from Lesbos in the Aegean Sea.
- Emmental Cheese : is a yellow, medium hard cheese that originated in the area around Emmental, in Switzerland, sometimes known as Swiss cheese, made from cow's milk. Emmentaler has a savoury, but not very sharp taste.
- Cottage Cheese : is a cheese curd product with a mild flavor. It is drained, but not pressed, so some whey remains and the individual curds remain loose. The curd is usually washed to remove acidity, giving sweet curd
cheese. It is not aged or colored. Different styles of cottage cheese
are made from milks with different fat levels and in small-curd or
large-curd preparations.
